Pica Sabroso Joins the Hot Sauce Fest ATL 2026 Judges Panel

Greetings, spice seekers. Dragonzorde here, reporting from the very important intersection of flavor, fire, and excellent life choices.


The Spicy Dragon Awards are back, and this year the competition is bringing serious fire: more than 200 sauces across 31 categories, all battling for bragging rights, shiny honors, and a place in Hot Sauce Fest ATL history. From smoky and sweet to funky, fermented, fruity, and face-melting, our judges have one deliciously difficult assignment ahead of them.


And all that sauce leads to one big day: Hot Sauce Fest ATL 2026, happening November 14 at Atlantucky Brewing. Come meet the makers, taste your way through the festival, catch the entertainment, and see which sauces rise to the top.


Now, let’s meet one of the humans brave enough to judge all this heat.


Today, I’m introducing Pica Sabroso, a certified chile veteran from Mexico City, Mexico who has been living the spicy life for more than 40 years. That is four decades of salsa, sauce, heat, and absolutely no fear of a pepper with bad intentions.

Mario is the creator behind @pica.sabroso, where he hunts down craft hot sauces from around the world, and the founder of Postrerero, his dessert venture. (IG: @posterero) Yes, this man lives comfortably in both the sweet and spicy kingdoms. I respect the range.


Growing up in Mexico, Tio Pica Sabroso learned an important truth early: there is a salsa for everything. Eggs? Salsa. Enchiladas? Salsa. Tacos? Obviously salsa. Coffee? He draws the line.


After tasting and reviewing hundreds of sauces, snacks, and spicy creations, Tio Sabroso knows the difference between heat that adds something to the meal and heat that simply kicks down the door and starts yelling. His judging philosophy is beautifully simple: the sauce should make the food better, not overpower it.


He has a particular weakness for Chocolate Habaneros and gravitates toward pepper-forward, smoky, fruity, sweet-heat, verde, rojo, and super-hot sauces. In other words, his palate likes options.


And if I ever invite Tio Sabroso to dinner, he already knows better than to arrive empty-handed. His dragon-worthy spread would include Gran Malo Flamin’ Hot—a spicy tequila with exactly the kind of attitude I appreciate (learn more)—along with chicharrón de habanero and cacahuates Pulparindo, a peanut-packed spin on the classic Mexican tamarind candy (learn more about Pulparindo). That is not merely bringing a dish. That is assembling a full spicy tribute to your fire-breathing host, and I approve wholeheartedly.


When he is not investigating bottles of liquid fire, Tio Sabroso can be found cooking his signature paella, traveling with his family, creating desserts through Postrerero, and championing small-batch sauce makers who deserve a little more heat on their name.


And yes, he will put hot sauce on vanilla ice cream.
