Happy national homemade soup day! In every cuisine, soup provides a rich basis for flavor and history. It is a dish that warms the soul. To celebrate, we will be making a creamy spicy chicken jalapeno popper soup! 


It's the perfect time to celebrate the heartwarming magic of homemade soup. This lovely fourth day of February honors the timeless tradition of crafting soups from scratch. From the classic chicken noodle to the exotic tom yum goong, soups have a way of transcending boundaries and soothing souls.

To make your own, you'll need:


  • 1 medium red onion (chopped)

  • 4 cloves of garlic (minced) (for roux)

  • 5 Jalapenos (diced)

  • Salt

  • Pinch of ground black pepper

  • 3 cups Cream cheese

  • 1 cup white wine

  • 6 chicken thighs (skin on) [or breasts (If you cook with breasts, add a chicken base using bullion when you add the water or 6 cups of broth instead of the water.)]

  • 6 cups water

  • 1 1/4 cup all-purpose flour (for roux)

  • 1 cup butter (for roux)

  • Big Red's Green Chili Avocado Hot Sauce

  • Immersion blender

  • Oil of your choice (recommended: avocado and/or olive oil)

  • 1 pint heavy whipping cream (half and half for less rich soup)


First, we add a drizzle of oil, our 6 chicken thighs (skin on), and then we will set our heat to medium high and salt generously. Cover.


After about 15 minutes, the chicken thighs should be golden brown on the bottom. Flip them once, and cover for about another 15 minutes.


In a separate pan, bring your butter and minced garlic to a simmer for about 3-5 minutes. Stir in flour until your roux gets crumbly, then take off heat.


After another 15 minutes, remove the chicken from the pot, keeping the oils and grease inside the pot.


Add your chopped onion and diced jalapenos. Stir.

Deglaze the pot with a cup of white wine (I like to use extra) and add your water or broth.


Bring to a boil.


As the pot is coming to a boil, begin pulling your chicken, removing the skin.


Now that our pot is boiling, add a dash of salt and your cream cheese whole. Once it's melted (about 5 minutes), stir.


Next, we will add half of the roux.


Immersion bend until smooth (about 1 1/12 minutes). For a thicker soup, add more roux.


Add you pulled chicken and stir.


Serve into shallow bowls, add your hot sauce, and enjoy!


Feel free to add more toppings: fresh jalapenos, tortilla chips for a nice crunch, Mexican blend shredded cheese or cheddar, bacon bits. For a real kick, add some habaneros when you add your jalapenos in the recipe.
