Starting with fire-roasted tomatoes as the base, raw honey locally sourced to balance the fruity sweetness of the Datil. Then Rice Wine vinegar that adds a light clean tartness with crisp mild taste. Finally, a dab of Modena IGP Balsamic vinegar for sweet tartness."
